Ok, so the truth is I was not ready to say goodbye to summer. After going to Florida and immediately coming back to these below seasonal temperatures – I was not a happy camper. In hopes to bring back a little summer, I decided to try a very different recipe for popsicles. Now, they are not the traditional fruity sort – but rather Earl Grey Kulfi Pops! I discovered them on a blog called Aarti Paarti (created by a lady who just won The Next Food Network Star, she's fantastic!!).


They are deliciously creamy, with a hint of sweetness. A very different taste – if you enjoy earl grey tea. Not to mention - Aarti and I both have the exact same popiscle trays (small things like this excite me).

Recently, there has been a lot going on that has kept me from experimenting in the kitchen. The stress has been building and I must admit – it began to suck the fun out of cooking. So the last few weeks I have taken a hiatus on creating my own recipes, and mainly just explored others – in hopes for some inspiration! So for this post I wanted to share some that I have found, and some that I urge you to try. If you are looking for something different and packed with flavour – here are a few ideas for you.  
This Pappardelle with Spiced Butter is essential to your vegetarian pasta collection! I loved this recipe from the get go – and I was lucky that I had all the spices beforehand, so it was just a matter of purchasing a few ingredients or making some substitutions. It is jam packed with Moroccan flavour, you’ll love it.
I made these for the meat lover in the house – Bombay Sloppy Joes, a must try.
I still make Zucchini Carbonara – another dish that you can make according to the recipe or easily convert to vegetarian.
A great risotto recipe – you can change up the veggies, and I use veggie stock instead.
For a treat – try these simple PB&J Chocolate Bars (a great mix of sweet and salty)!
I hope that inspires you a bit just until I can get myself organized and back on track. I look forward to tonight, where I am back in the kitchen with time to test out a few ideas.

Trip To Florida!


Ok, I owe you all a post! I have not forgotten – rather I have been very busy. I just came back from an amazing trip to Florida with my family and I have been attempting to get my butt back into school mode. I thought I would share a few photos and stories from my trip – and then we will get back to the cooking! (I promise).


This trip was particularly interesting because I was bringing along Mike, who had never been to Florida - let alone been on a plane before! So, a lot of exciting firsts were shared. Our immediate impressions of Florida this time included – the wall of heat and humidity that slammed us as soon as we stepped out of the airport (heaven), the bountiful tropical plants lining the streets (those that we are confined to using as house plants), the fact that u-turns are completely legal and signal lights are practically optional (scary), and the shocking revelation that the entire gulf coast does not recycle (heart breaking sadness). Regardless, I dragged my nerdy self and my entire family to the town recycling plant – I am sure they enjoyed that frequent trip.


We lucked out for the first three days - there were crazy amounts of torrential Tampa Bay rain. The storms are exciting and beautiful to watch at night, but not as pleasing when they happen during the day. Either way, this let us have the opportunity to do many day trips.


We ventured to The Florida Aquarium to explore hundreds of different species of fish and beautiful coral reef displays.


My most favourite and unforgettable visit was to the Marie Selby Botanical Gardens. These grounds boast 20 000 plants – and this includes 6 000 orchids! It was simply gorgeous and surreal. They have conservatories, butterfly gardens, bonsai collections, koi ponds, banyan groves and bamboo gardens – I could have stayed for hours. I highly recommend this spot if you are ever in the area.


Also, I must mention the Suncoast Seabird Sanctuary – the largest sanctuary in the United States, with over 8 000 injured birds admitted each year. Almost everyday I take a walk down the beach to visit - it is a beautiful and smelly place of hope. These people continue to truly make a difference and my family has supported them since I was just a few years old.

Right now, they are struggling with the many birds being dropped off from the oil spill. I was asked to volunteer on my last day there, but unfortunately I was leaving and unable to do so. If you have ever sat there helplessly watching the news seeing the damage created by the oil spill and not known how you can make a difference – this non-profit organization could use some help. I never want to sound preachy on this blog, but trust me – I witnessed firsthand the damage and it is very disheartening.


On a lighter note - the rest of the trip was spent enjoying the beach and fishing with my dad – which I have been doing since I was two years old. The pier is my second home and has tons of great memories!


Now onto the food! Before I left for the trip, I decided to look up Guy Fieri’s list of restaurants that have been on his show Diners, Drive-Ins, and Dives. It was my dad’s idea and we all thought it would be neat to test one out. We found Keegan’s Seafood Grille to be the closest location, and you can check out the you-tube video of the episode here. We should have watched it before we left to get an idea of what to try, but we happened to order off the written specials on the blackboard anyways – everyone feasted on multiple servings of the best crab chowder ever. I tested out a vegetarian pasta while I let them explore all the seafood dishes.

Overall it was a great experience, but having fried food every day can get a little sickening. Sometimes you just crave something fresh, and Sweet Tomatoes is the place. It is a reasonably priced buffet style restaurant and it is always packed. They have a wicked salad bar, soups, pastas, pizzas, deserts – mmm! A healthy experience – with many vegetarian options.


Overall, this was a perfect vacation to end the summer and I was sad to leave. Now it is back to the grind, and my school course load hit me full force the very first day. Don’t worry, I still have many neat recipe ideas and cannot wait to get back in the kitchen for the fall season. I heard there were a few people reading this blog that are newly converting to vegetarianism and curious about all the options out there – after I take care of a few sweet ideas, I promise to put some easy dinners up here too!

Fried Green Tomatoes


Fried green tomatoes have always intrigued me, along with deep fried pickles (which I will leave for another post). Strangely, up until now I have never tasted them – let alone cook them myself. So when I got the opportunity to grab some fresh green tomatoes from Sandy’s vegetable garden up north, I jumped at the chance. I had never been so happy going home in the car with a bucket full of tomatoes, basil, and zucchini blossoms – all the things I cannot wait to grow in my own yard one day. You see, I currently live in an apartment that lacks not only a balcony, but even so much as a window sill. Needless to say, that dream will have to be put on hold until I move out.


As I have mentioned before, this blog is about a learning process. So not having a clue where to start, I decided to use a recipe from the famous Guy Fieri – you know, the host of Diners, Drive-ins and Dives. I figured that if there was anyone who knew anything about fried food, it would be him. Therefore, I did not change a thing about his recipe. I thought I’d test his out first, and then dream up what I could possibly do next.

Essentially, you begin by slicing your tomatoes to about 3/8 of an inch. My mandolin does not make slices thick enough for this, so I sliced them by hand. This led to couple of uneven slices with varying thicknesses – but hey, that just adds to the homemade appeal. Next, you mix up some buttermilk and yogurt to dip the tomatoes in before you batter them.


Tip: If you do not have buttermilk on hand, you can easily mix your own! Buttermilk does not actually contain butter. Rather it is simply the left over, sour liquid from the butter-making process. All you need to do is add 1 cup of milk with 1 tablespoon of white vinegar – let it sit for 5 minutes, whisk it together and you’re finished.

I then quickly made the batter. Typically, they tend to consist of a combination of flour and cornmeal. Guy’s had some cayenne and pepper to kick up the spice – although, next time I would add more flavouring to this part of the recipe.


Heat up your oil to 365F. A neat trick I learned – since I do not own a thermometer yet (that is on the to-do list) – is to put a wooden spoon in the hot oil, and if it really bubbles around the edges, your oil is hot enough to fry. So drop in a few tomatoes at a time, and cook them a 2-3 minutes on each side. Next time I will wear a shield, as I only suffered minor burns from the hot oil. Hey – at least I didn’t set anything on fire this time.


Once they are fresh out of the fryer make sure to sprinkle them with some kosher salt. As for the dipping sauces, there are endless possibilities – ranging from cream sauces to marinara sauces.

The end result turned out pretty good! Once you bit into the perfectly crunchy outer layer, your palate was immediately hit with a blend of both sweetness and acidity. I loved the warm flavour from the deep frying, and it really amplified the fruity, sweet nature of the tomato. Overall, I think the batter needs some work – and next time I would really kick it up with a few more spices. Make sure to gobble these up right away as they don't keep.


Lastly, I would just like to mention that I am lucky enough to be going on a trip to Florida tomorrow with Mike and my family! Vegetable Barley Stew


This weekend we drove up north to visit with Mike’s family and to celebrate our birthdays. It was a great weekend – with even greater food. His mom’s baking is out of this world – so clearly, I had to feast on my favourite peach pie, raspberry birthday cake, and pull-apart cinnamon buns. I was weak and ate multiple servings of each (not the time to be worried about counting calories). Furthermore, to my surprise I received the neatest birthday gift – a handmade apron with my website on it!! I thought you guys would like to check it out so I posted a little picture. A big thank-you to Sandy and Bob for making it, and of course Alex for having to try it on so many times to make sure it fit just right.


So now that I am more appropriately decked out for the kitchen, let’s get cooking.

Now I know this recipe might not be the first thing you would want to make during the heat of summer, so why not save it for a couple months? I was aiming to use up the various produce I purchased at the farmer’s market – and to be honest, sometimes I just crave a good soup. Or is this a stew? Stoup? I turned out thicker than expected.


The original idea to do a soup came from a Mario Batali recipe, posted on the Food Network. Although, ultimately this soup became a huge departure from the original – I thought I would still post his for reference. You can really use any ingredients you have on hand and change up the vegetables if you like. Just don’t forget the leeks – they add a great flavour and I just love using them in soups. Lastly, top it off with a big drizzle of basil oil and shavings of fresh parmesan to kick things up a bit.

Vegetable Barley Stew:
Note: This could easily be made vegan by replacing the butter and parmesan with alternative ingredients. Also this recipe could be halved, as it does make a large pot. Remember to use what you have on hand.

2 Tbsp extra virgin olive oil
1 T butter
1 cup onion, diced
2 celery stalks, diced
2 leeks, quartered length-wise, sliced, and soaked in the sink to remove any sand
¾ cup pearled barley, rinsed
2 cups barlotti beans (Roman beans)
3 T tomato paste
Kosher salt
Pepper
8 cups vegetable broth (preferably homemade, or a good quality organic store bought version)
1 ½ cups potatoes, diced
2 carrots, diced
1 cup zucchini, diced
1 cup frozen peas

Basil Oil:
1 cup basil
1 large clove of garlic, finely chopped
¼ cup olive oil
Parmesan cheese

Heat the oil and butter on high in a large pot. Add your onion, celery, and leeks. They will give off quite a bit of water, so keep the heat high and stir until golden. Stir in the tomato paste, beans, and barley. Season to your taste with salt and pepper, and add the vegetable broth. Bring to a boil and lower the heat until simmering, for 30 minutes.

In the meantime, toss the basil and garlic in a food processor and slowly add the oil. The goal is to form almost a pesto-like consistency (you may or may not need more olive oil), and set aside.

Add the potatoes, peas and carrots to the pot and simmer again for 20 minutes or until just almost tender. In the last 10 minutes toss in your zucchini, and add more broth or water if the soup is getting too dry.

Serve with nice drizzles of basil oil and big shavings of parmesan.

Pickled Red Onions


Most people may not have quite the obsession that I have with pickles, I could easily eat a whole jar in one sitting. From a very young age, I continually rated the quality of pickles at every restaurant or fast food chain that served them. In fact, I think I still do – I am just in denial.

Recently, I have been delving into the world of canning and preserving. One of the first things on my list was to make homemade pickles – and really you can pickle almost anything these days.

I often visit a great Italian restaurant called Ritorno, located in Oakville. Ironically, the manager (not sure if she is the owner) is from North Bay and went to school here for hospitality – small world. Their food is spectacular, and my dad and I always share their antipasto platter for two. This plate is littered with fresh breads, cheeses, meats, and various pickled veggies – you can check out their menu here. My dad dives right into the meat and cheese, while I basically inhale every pickled or marinated vegetable as quickly as I can. My recent favourite, and one that I have grown to crave, are their pickled red onions. They are so tart – I mean scrunch your face up, eye-watering, tart (in a good way).


I decided to go on a hunt and see what was out there in the recipe world for these delectable pickled red onions. What I found, was that most recipes either were based on just straight vinegar or spiced vinegar. Immediately, the underlying notes of cloves, peppercorns, red chiles, bay leaves and cinnamon seemed most appealing to me. This would add a depth of flavour to the pickle and possible tame the tang? We’ll see.

After endless pondering, and a severe craving for vinegar, I decided on playing around with a recipe found on Orangette. This food blog is what all foodies aspire to become – definitely worth checking out.


I made a few changes, among them are varying the amounts of sugar and vinegar – Ritorno's pickles have what tastes like no sugar added, so I didn’t want them to be too sweet. You can simply play around with the flavours and test out what suits you best. Most people serve these with cheese, crackers and breads – but I picture them on a falafel sandwich and I’m in heaven. Better yet, eat them right out of the jar.

Pickled Red Onions:
Based on a recipe featured on Orangette, found here.

3 cups distilled white vinegar
½ cup natural cane sugar *
1 cinnamon stick, broken in half
4 whole cloves
5 allspice berries
1 red chile, broken in 4 (1 piece for each jar)
2 bay leaves
1 star anise
15 black peppercorns
1 ½ lbs red onions
2 cups water

In a medium stainless steel (non-reactive metal) pot, bring to a boil the vinegar, sugar, cinnamon stick, cloves, allspice berries, chile, bay leaves, star anise, and peppercorns.

Slice the onions fairly thin either by hand or on a mandolin. (A mandolin makes this much more efficient and provides more uniform slices – although it is not a necessity). Also note that you can vary the thickness of the onions depending on your preference (I prefer them thin because it is what I am most used to). Make sure to toss out the bruised or tough outer layers.

Once the brine has come to a boil, add the onions in batches. As soon as you do so, allow the brine to come to a simmer again and leave them in for 15-20 seconds. Stir them down with a wooden spoon. This quick cooking time is essential in retaining a crispy, crunchy onion – nobody likes a mushy pickle. They will immediately be a vibrant pink colour. Remove them and spread them out on a baking sheet to cool (you may need a few of them); this will speed up the cooling process. Continue to blanch all your onions in batches. Once you are finished, chill your brine in the fridge. In the meantime, sterilize your jars.

When everything is completely cooled, place the onions in the jars – I ended up using four 500 ml jars. Add the 2 cups of water to your brine mixture and stir to combine. Fill your jars with the brine and make sure the onions are completely covered. You may have a few extra onions – I just munched on them as I was canning.

I did not seal my jars, because I thought reheating them might compromise the crispy nature of the onions. Simply place them in the fridge and within 2-3 days they are ready to eat. They will keep for approximately one month.

* Note that I drastically reduced the amount of sugar, if you are looking for a sweeter pickle then feel free to adjust that to your liking. Make sure to taste your brine as you go. I also used natural cane sugar (less refined), but I have also seen this recipe done with the addition of honey – something to try in the future? Enjoy!

White Chocolate Dipped Cranberry Almond Biscotti


Oh yes, I did it again – another sweet recipe. Sometimes I just cannot resist. This time my goal was to make my first biscotti with whole grain flours and less refined sugars. That incorporates some healthy aspects, right? Maybe – but not after I decided to dunk them in white chocolate. Yes, you heard that correctly. Delish!


I remember going to cafes when I was younger, before I had ever experienced my first cup of coffee, and staring at the glass canisters full of biscotti. Never did I have any urge to try this crunchy cookie - until recent years.


I first experimented with a recipe that was going to be my basis for the biscotti and it turned out terribly. The ratio of dry to wet ingredients was way off and it was very frustrating. So I decided to jot down a few notes, and create my own version. Ultimately, I was impressed with the way everything turned out. They are perfect to eat on their own, or even better – dunking them in a hot drink. The white chocolate tastes great as it melts and infuses a warm cup of coffee. More notably, the underlying citrus flavour might give you an excuse to munch on one for breakfast – but I didn’t just advise that.


For this recipe, I used a mixture of whole wheat flour and all-purpose flour. I would have much rather used a whole wheat pastry flour, in replacement of the all-purpose, but was unable to find it in the northern grocery stores at the time. A combination of the two flours is essential or you will end up with very dense biscotti. In addition, natural cane sugar was used rather than a refined white sugar. So give these Italian double-baked cookies a try, it might be a great recipe to try for the fall – I was just too excited to wait that long.


White Chocolate Dipped Cranberry Almond Biscotti:

1 2/3 cup whole wheat flour
1 2/3 cup all-purpose flour (or whole wheat pastry flour)
¾ cup all-natural cane sugar
1 Tbsp baking powder
Pinch of salt
1 cup almonds, coarsely chopped
½ cup dried cranberries, roughly chopped
1 Tbsp orange zest
3 large eggs
½ cup olive oil
¼ cup fresh orange juice

Glaze:
1 egg, beaten
¼ cup all-natural cane sugar
340 g good quality white chocolate (optional, but you won’t regret it)

Preheat your oven to 325F and line a baking sheet with parchment paper.

In a large bowl, combine whole wheat flour, all-purpose flour, cane sugar, baking powder, salt, almonds, cranberries, and zest.

Whisk together the eggs and olive oil by hand. Gradually stir in the orange juice until combined.

Make a well in the center of your dry ingredients and slowly add your liquid mixture. Stir and form a dough. Note that the dough should be stiff, never gooey, and the flour should be combined.

Divide the dough into two loaves – you may need to flour your hands, although it should be fairly easy to work with. Flatten and shape the dough into approximately 4-5 inch wide and 9-10 inch long loaves (no need to be exact, the irregular shape can add some character).

Brush on the beaten egg, and sprinkle with sugar. Place the dough on the cookie sheet and bake for 25-30 minutes. The loaves should be golden in colour and just slightly firm to the touch (remember you will be baking them once more). Let them cool completely, this will help you slice the loaves.

Once cooled, cut into ½ inch slices. Again, this does not have to be perfect. Biscotti are traditionally this thin but if you prefer a heartier version that is fine too (mine varied). Place the cookies back on the baking sheet and bake for 10-15 minutes per side. You want them to be a golden brown (they will appear slightly darker due to the whole wheat flour) and fairly dried out (so they have a nice crunch and withstand some dipping in your coffee). Just remember that they tend to firm up even more while cooling once again.

After cooling the cookies for a second time, place a bowl over a pot of simmering water (never boiling water, you do not want to burn the chocolate). Also, make sure that your bowl does not touch the surface of the water. Then add the chocolate – I did this in batches, continuing to add more chocolate as I needed it. Stir until it is fully melted. You can either dunk half of the biscotti in the chocolate, or use a knife and spread the chocolate onto the cookie (this was much easier for me). Set the dipped cookies on a sheet of parchment paper and let the white chocolate completely cool until it hardens. Store them in an airtight container.

Sun-Dried Tomato Pesto Penne with Balsamic Roasted Tomatoes


So, I must confess – I set the oven on fire the other night (and I mean on fire). What an ordeal, am I really meant to be in the kitchen if I am such a hazard? Anyways, it was a complete fluke accident and I will spare the embarrassing details. Thank goodness for baking soda. It just made me realize how streamline and smooth the cooking shows on television are in comparison to my own kitchen. Ultimately, nothing was ruined and no one was hurt. It has now become a laughable situation. Did I mention I wasn’t perfect? I think so.

Other than that my August long weekend was pretty good. I caught up with a few old friends and also made my first 100 percent whole-wheat chocolate chip cookies out of Good to the Grain: Baking with Whole-Grain Flours. They were excellent – a different earthy and nutty flavour paired with dark chocolate. You should give them a try if you are looking for a healthy twist on a traditional recipe.


For this next posting I thought you might like a main course. I decided to play off of Giada’s Sun-Dried Tomato Pesto recipe, but I wanted to lighten it by tossing in some sweet oven roasted tomatoes and fresh baby spinach.


Additionally, I added some kick to her pesto with a few red pepper flakes - I love the spice.


I felt that the sauce was fairly heavy with the strong taste of the sun-dried tomatoes that I did not need to add the parmesan - I just topped it with a few crumbles of goat cheese (a great pairing). It turned out wonderfully. So here is my version, and everything can be altered to your own tastes. If you are not a fan of sun-dried tomatoes, I am sure I have something up my sleeves for next time!

 Sun-Dried Tomato Pesto Penne with Balsamic Roasted Tomatoes:

 6 cups whole-wheat penne
 1 cup of reserved cooking water
 2 generous handfuls of sliced baby spinach
 a few crumbles of goat cheese

 Pesto:1 (270 mL) jar sun-dried tomatoes packed in olive oil
 2 cloves of garlic
 a few good pinches of red pepper flakes (to taste)
 1 cup of fresh basil

 Balsamic Roasted Tomatoes: *1 pint of small heirloom tomatoes
 2 T olive oil
 1 ½ T Balsamic vinegar
 Kosher salt

Heat your oven to 350F. Cut the tomatoes in half, and place them on a baking sheet. Toss with the olive oil, balsamic vinegar, and turn them facing cut-side up. Sprinkle with a couple pinches of kosher salt. Roast them for approximately 45 minutes until they are tender, shrunken, and sweet.

* I would recommend doubling the ingredients for the roasted tomatoes if you are serving more people. We seemed to scoop these in our bowls faster than we anticipated.

 Meanwhile, make the pesto by pulsing together the sun-dried tomatoes and their oil, garlic, red pepper flakes, basil, pepper to taste and if you wish a sprinkle of kosher salt. Blend until the tomatoes are finely chopped. Transfer to a bowl and set aside.

Cook the pasta in a large pot of boiling, salted water. Make sure you reserve 1 cup of the cooking water before draining.

In a large bowl, add your pesto (you may not need to use it all, depending on how strong of a flavour you prefer). Add the hot pasta, and toss thoroughly to coat. Slowly add some reserved cooking water just to moisten and thin the pesto out – not too much, it should still have a bit of bite to it. It is really a matter of preference here, so you can add more pesto or seasoning if want.

Lastly, toss in your sliced spinach – it will shrink down quickly in the hot pasta mixture. Top with your balsamic oven roasted tomatoes and a few crumbles of goat cheese.

Watermelon Sorbet

For the past few weeks, I had been anxious to make sorbet. The next step was deciding on a flavour – and since Mike is a huge fan of watermelon, I thought I’d give it a shot.


I have tasted melon sorbet before, and I hoped that this would turn out to be just as flavourful. The key here is to pick a fresh and almost overly ripe watermelon. Either way, the amount of sugar you add will depend on the sweetness of the watermelon.



This sorbet gives you that natural refreshing taste, with a hint of lemon – perfect for the summer.


However, it would be interesting to experiment with different sweeteners if you are not a fan of refined white sugar. Considering this was my first attempt I thought it turned out fabulous! Maybe next time I will use honey, rather than sugar, and taste the difference.  


Watermelon Sorbet

5 ½ cups seeded watermelon flesh
1 ½ cups sugar *
2 cups water
Juice of 2 lemons

Roughly dice up the seeded watermelon flesh, and puree in a food processor.

Boil the water, and then add the sugar until it has dissolved. Remove the syrup from the stove and add the watermelon puree and lemon juice. Place the mixture in the fridge for about 3-4 hours until it is completely cool.

Once cooled, pour into an ice cream maker and process according to the manufacturer’s instructions. Afterwards, the sorbet usually needs to be popped in the freezer for a bit. If you leave it overnight, make sure you take it out before serving it (as it will be too hard to scoop and serve).

* Remember: The amount of sugar can be adjusted to your taste, depending on how sweet your watermelon is.

Pillow Cookies

This happened to be the very first recipe I stumbled upon while blog hunting. I immediately fell in love and I knew I had try them. The recipe is found on Bakerella – an amazing blog known for her creative cake pops. So for fun, I thought I would test her cookies and see how they turn out.

Think the best chocolate chip cookie you have ever had, with a brownie stuffed inside. The process was way easier than I expected, and did not take me long.


First, just bake a batch of brownies (either a homemade recipe, or from a box...it does not matter). Once they have cooled, cut them into one inch squares – there will be lots of leftovers, so enjoy.

Then you make her chocolate chip cookie dough recipe, and you chill it for 1 hour. Afterwards, use ½ cup of cookie dough for each cookie on a parchment lined pan. (They are massive!). Put a thumbprint in each ball of dough and put the brownie in the middle – you may have to press down the brownie a bit. Then work with the dough to cover the top of the brownie.

Then you bake them! Make sure to space them far apart – my oven is small and I can only fit a small baking pan inside. Therefore, I had to bake them in batches of 3 - otherwise they will run into each other. For me, it made about 11 cookies total. (I say about because Mike was eating them as I pulled them out of the oven – so I definitely lost count).

And now for the inside!

Trip to Niagara

Recently, I just took a short day-trip to Niagara with my family. I had the best time limping around and trying to check out all the little shops on the pretty flower-lined streets. There was a delicious fudge shop, Maple Leaf Fudge, where I tried my first blueberry flavoured fudge – so creamy and delicious. We then explored all the boutiques on the busy bustling streets.




My boyfriend Mike had never seen the falls – so of course we took a little detour to show him. Tons of people were cramming together trying to get pictures. Thank goodness we had a great zoom on our camera and we were able to get a few closer shots.



Afterward, we stopped in at a small restaurant in a plaza that was recommended to my parents by a couple of locals. It was called Rest Stone Road Grille – a bistro that is located just south of downtown Niagara-on-the-Lake. The walls were lined with beautiful art and the bar was topped with homemade preserves – a perfect atmosphere, making you forget you were in a strip mall entirely. Here, Rest uses only local Niagara wines and promotes an ever-changing menu with seasonal local produce/fruit – right up my alley!


I tried the “Birkenstock” – a sandwich on their homemade bread with hummus and loaded with vegetables. Of course I couldn’t just try one meal off the menu, so I also shared the “Margherita” pizza. It was simple and delicious - fresh basil, garlic oil, oven-dried tomatoes, and mozzarella cheese. My parents ordered their “Thai Chicken Salad Sandwich”, and the “Quinn-Tessential” pizza – this was their second time ordering the same meal, so clearly they enjoyed it. Mike tested out the “Steak Frites” – which was served with flavourful herb butter for the steak and spectacular aioli for the fries. What was even more interesting was their lemon cucumber water they served. It was simple and just what we needed after a hot day in the sun.


As soon as we got back home, my mom had a jug of cold water with a few slices of cucumber and lemon ready to try out. I decided to post this because it is so easy and the cucumber adds an interesting twist on normal lemon water. It may not be for everyone, but it is a creative refreshing idea we all enjoyed. I recommend drinking it in the same day, and making a new batch the next day – as the cucumber can become quite strong overnight.

Wheatberry Salad

After easing my way into summer, I fractured my ankle. It seems fitting, since things like this usually happen to me when the weather is finally nice outside. So spending hours standing in the kitchen testing recipes did not seem ideal – I decided to pull out my cookbooks and go from there.

I had recently picked up some wheatberries - they are an excellent source of fibre and they add a great crunchy texture to many salads, breads, or stews. Wheatberries are unprocessed wheat kernels that contain the germ, endosperm, and bran – with only the hull removed. Their nutritional profile is spectacular, so why not try them out!

You can usually find them in your bulk food section of a local health-food store, or you may order them from Bob’s Redmill. Store them in a cool dry place, or even the fridge to extend their shelf life. Before cooking them, make sure you give them a good rinse until the water runs clear. Then bring 3 cups of salted water to a boil for every 1 cup of wheatberries – you can drain out any excess if need be. I find they take about 1 hr of simmering to soften up, but they will still remain slightly al dente.


This particular salad is from Barefoot Contessa Family Style: Easy Ideas and Recipes That Make Everyone Feel Like Family(page 67). Unfortunately, I do not have permission to post this recipe but creating your own version will be just as good. Essentially you can play around with the ingredients as much as you like. Here there are finely diced red onions, red pepper, carrot, green onions – but I encourage you to use whatever vegetables you have on hand.

The dressing is flavoured with balsamic vinegar, olive oil, salt and pepper – very simple. The key here, is allowing the salad to sit so the wheatberries can absorb all the sauce. I served it at room temperature, which Ina recommends.
